I will not lie. Chex mix is very easy. It is super tasty. And it is wildly POPULAR at my house. 😉 I feel like I’m getting mobbed by the kids the whole time I’m making this. You would think I was decorating cookies or something!! I’ve also never been to a party where it wasn’t a hit. The beauty of Chex mix is that there is something in it for everyone…my daughter loves the pretzels, my son begs for the bagel chips, my husband goes for the chex…and of course I love the nuts!! So what makes this particular chex mix recipe the best? That’s what I’m about to tell you!!! 😉
In the vegan diet there is one thing that I miss more than any other single thing. It’s cheese. Real cheese. I’ve been vegan/vegetarian for over 30 years (crazy, right?!) and though I have few other cravings, cheese is my worst enemy. In fact, truth be told, sometimes the enemy wins and I eat pizza, and then I hurrttt… I’m not lactose intolerant; my body just doesn’t like cheese. This summer I finally found a vegan cheese that I am totally in LOVE with! I really can’t stress this enough. I feel like waving my arms and shouting from the rooftops! This cheese is totally life-changing – and all it takes is about 10 minutes of kitchen prep/cook time!
My kids love to help me cook. If you could see my son’s legos, just inches away from my cutting board, as he stands (crowds) beside me while I cook, you’d probably laugh. My two year old sees him there and decides that she needs a closer look, pushing a kitchen chair over to aid her height, while all but squeezing the cook (me!) out of the way. (Not to mention that now two children are blocking all my cabinets and drawers where there are bowls, beaters, measuring spoons, etc.) Then my oldest daughter (7) comes in with that mischievous look and quick little fingers dipping, licking, tasting everything… At least with vegan cooking there is very little that isn’t safe or good even in the raw state, so it’s mostly just a bitter surprise if they happen to swipe up some spots of baking powder off the counter thinking it’s sugar. 😉
It all started when I saw them… Those mini street-taco tortillas. I mean, isn’t the grocery store a great place to fall in love? And day-dream? 😉 Fellow shoppers were probably eyeing me strangely as I contemplated what these were going to be. Little palm sized bombs of flavor – like you would buy at the beach in Belize! Somehow I finished shopping and got home and then the real magic happened. And now vegan baked tofu street tacos can be part of your dreams too! Ohhh, yes!

We all need a in-a-hurry muffin recipe for a light supper, breakfast extra, or snack. To be honest, this was my third batch of muffins in two days. Yeah, I was planning them for something, but the kids and I ate them all last night. 😉 Oh, Nana was here too. Maybe we can blame it all on her. 😉 J.k. Anyway, these are good and quick and really pretty guilt free, so I made more today!!! 😉 Only a quarter cup of granulated sugar and the same of oil? Let’s make them

The other day I had a bunch of bananas getting a little too ripe. I happened to mention that fact to my husband and he knew just what I should do with them – banana bread!! Of course. He’s so smart, no really he is! I mean, over-ripe (dark/spotty) bananas make the very best banana bread. And with some chocolate chips? It’s pretty much perfect bliss. 🙂 And it’s a great way to make your honey very happy. 😉
When life gives you mushrooms, make stuffed mushrooms!! Or something like that. Someone gave me some a beautiful combo of button and portobello mushrooms this week, and I knew just what I had to do with them.
Ok, so let me start by saying this is NOT average granola. It’s decadent. It’s so yummy that I’ve never fed it to a guest (in my recollection) that hasn’t asked for the recipe!! (I try to avoid telling them how EASY and QUICK it is to make so they really think I worked hard for them!! 😉 We love it on super-thick frozen smoothies, for breakfast with strawberry soy milk, topping vegan yogurt, or just as a simple snack. It’s totally habit-forming, so get ready to have to use some will-power here folks!! 🙂
