    Vegan Mocha Mug Cake

    This Vegan Mocha Mug Cake is the best! It's the perfect individual dessert, with its rich chocolate flavor and hint of espresso. This vegan mug cake is ready in 5 minutes... I highly suggest letting it cool down for a few minutes after it is done microwaving... but I know I can't resist taking little taste tests as it cools!

    Vegan mug cake

    Mug cakes to the rescue when you're craving dessert but don't want to bake a whole tray of brownies!

    This mocha mug cake has espresso ground coffee added to the batter. The coffee helps bring out the rich flavor of the cocoa powder and makes this mug cake even more delicious!

    You can use really finely ground espresso coffee or instant coffee—either way the coffee flavor will work well here!

    No egg mug cake

    Obviously, this is an egg-free mug cake recipe (ya know, vegan). But I wanted to point that out in its own section because a lot of people reach about with questions about baking without eggs (especially lately with the price of eggs).

    In a lot of recipes, you can simply omit the egg. No vegan egg substitutions needed. This is exactly one of those recipes! The baking powder in the batter is enough to make the cake rise and not get too dense as it bakes. Since this is a small portion that cooks quickly, it doesn't have time to get dense and tough. So yes, an no egg mug cake here!

    Ingredients

    • ¼ cup all-purpose flour
    • 2 tablespoons cocoa powder (cacao powder)
    • 3 tablespoons organic vegan granulated sugar
    • 1.5 teaspoon espresso ground coffee
    • ½ teaspoon baking powder
    • 1 pinch salt
    • ¼ cup almond milk (or other dairy free milk)
    • 1 tablespoon vegetable oil
    • Optional: mini chocolate chips
    • Nonstick baking spray (or extra vegetable oil to brush the mug)
    • Optional: powdered sugar for serving

    Equipment

    • Microwave
    • Medium bowl or a large 1-2 cup measuring cup with a spout
    • Mug - it must be microwave-safe and at least 10 oz, a large 12 oz mug is better

    Instructions

    Step 1: Grease a 12-oz microwave safe mug—either spray it with baking spray or brush with vegetable oil.

    Step 2: Combine all the dry ingredients (flour through salt) in a medium bowl or your large measuring cup. Stir or whisk until evenly distributed.

    Step 3: Add in the almond milk and oil. Whisk until smooth.

    Step 4: Pour the mixture into the prepared mug. Optional: Top with a few chocolate chips.

    Step 5: Cook in the microwave on full power for 75-90 seconds, or until the top is set and a toothpick inserted into the center comes out clean (or with clean chocolatey crumbs) but not wet. If your microwave is weaker, you can go to 2 minutes, but do not over cook or it will be too dry. Keep an eye on the microwave, stop it if the mug cake starts overflowing and let it come back down before continuing.

    Step 6: Allow to rest and cool down for at least 5 minutes before eating. Dust with powdered sugar to serve, and enjoy!

    Tips for microwave mug cakes

    → Use a large mug because the cake rises as it "bakes" in the microwave.

    → You can mix the mixture directly in the mug, but make sure to whisk/mix it really well so no lumps remain at the bottom.

    → ALWAYS KEEP AN EYE ON THE MICROWAVE AS THE MUG CAKE IS COOKING! You don't want it to rise so much that it overflows, in case your mug isn't big enough. If you see it rising too high but the center, open the microwave door, let it cool down, the let it continue cooking.

    → DO NOT OVERCOOK. The mug cake should be fully cooked and not wet on top, but if you overcook it, it will be too dry. So keep an extra close eye on it the first few times you make this. My microwave strength is 1000 watts and I cook at high power for about 80 seconds, depending on the shape of the mug and temperature of my ingredients.

    → Do not stir in the chocolate chip, but place them on top. They will sink towards the bottom. If you want more chocolate chips on top, pause the microwave halfway through cooking, add more chocolate chips, then continue cooking.

    Serving ideas for mug cakes

    I love the powdered sugar on top! A scoop of vegan ice cream is also delightful (try this vegan cherry cherry chocolate ice cream!). Try topping with a drizzle of vegan caramel sauce or vegan chocolate sauce! Add a scoop of vegan whipped cream. YUMM.

    You can dig in with a fork or a spoon, or you can use a large spoon to scoop it out onto a plate.
