Bright, fresh, flavorful, easy-to-make Blueberry Lemon Vinaigrette! You'll be adding this dressing to ALL your salads this summer! This gorgeous lemon-based vinaigrette can be made with fresh or frozen blueberries and is a favorite around here!

This dressing is naturally vegan and gluten-free.

Blueberry lemon dressing

You know what I love? A delicious salad dressing that is as healthy as a salad itself! This blueberry lemon salad dressing recipe uses a whole cup of blueberries. Blueberries are loaded with nutrients and make a tasty addition to any salad.

I especially love this vinaigrette because it uses flavorful lemon juice as the base instead of vinegar. To balance out the tartness of lemon, I add agave nectar. The combination of sweet and sour is what makes this dressing absolutely irresistible!

Whip this dressing up in your blender or food processor in under 5 minutes, and drizzle it on everything from salads to vegan ricotta crostini.

Ingredients

  • 1 cup fresh or frozen blueberries
  • ½ cup olive oil
  • Juice of 1 lemon (about 1-2 tablespoons, to taste)
  • ¼ cup agave syrup
  • 1 small clove garlic, minced or chopped
  • ½ teaspoon salt, or more to taste
  • ¼ teaspoon black pepper, or more to taste
  • 1 tablespoon fresh parsley leaves

You'll also need a blender or a food processor.

Ingredient notes and tips:

→ Blueberries: You can use any blueberries you like. I find that most frozen wild blueberries are more tart than fresh blueberries, and you might need to add a little more agave to compensate. I like Wyman's frozen wild blueberries though - they're super flavorful and give the blueberry dressing a beautiful, bright pink-purple color. 

→ Lemon: Always use fresh lemon juice for salad dressing, it has a MUCH fresher and more vibrant flavor than bottled lemon juice. (Honestly, I've been known to drizzle lemon juice on my salad, add some sea salt, and call it a day). I love using this lemon squeezer when I need to juice just ½ or 1 lemon - it's super easy to use and it's lasted me over a decade!

→ For extra lemony flavor, zest the lemon and add the zest to the blender or food processor. I use this microplane zester to zest a lemon, it's so easy and makes the whole kitchen smell fresh! Tip: zest the lemon before juicing it!

Make the salad dressing in a blender:

Step 1: Add all ingredients to a blender (or a food processor).

Step 2: Pulse until everything is combined and smooth - or leave a little texture if you like.

Step 3: Drizzle over your favorite salad and enjoy!

What kind of salad to serve with blueberry lemon dressing

I love my salads to have lots of flavors and textures, so I often serve this dressing over a leafy mixed greens salad with chopped apples, toasted slivered almonds, sliced mushrooms, halved grape or cherry tomatoes, and cucumber slices. Add some crispy tofu or tempeh to make it more filling. Add some vegan bacon bits for a salty smoky crunch. Add some cubed vegan feta for creaminess. 

Another serving idea is to make a bruschetta with vegan ricotta, fresh blueberries, and a drizzle of blueberry lemon vinaigrette. Throw a basil leaf or a mint leaf in there if you're feeling fancy. 🙂

How long does vinaigrette last in the fridge?

This lemon blueberry vinaigrette will stay fresh for about a week in the fridge when stored in a sealed container or jar. We always go through it faster though! I like to pour fresh dressing on my salad and store the leftovers in these adorable little jars.

Notes

→ Blueberries: I find that most frozen wild blueberries are more tart than fresh blueberries, so you might need to add a little more agave to compensate. No need to thaw frozen blueberries, they'll thaw as they blend and come into contact with the other ingredients.
→ Lemon: Use fresh lemon juice for a fresher lemon flavor, and add some lemon zest for even more lemony flavor without adding extra sourness! Plus your kitchen will smell wonderful 🙂 Tip: zest the lemon before juicing it!
→ Agave: Substitute maple syrup or organic sugar if you don't have agave available.
→ Store leftover dressing in the fridge for up to 1 week. I like to pour fresh dressing on my salad and store the leftovers in these adorable little jars.
