Delicious and healthy, this naturally sweetened simple berry sauce can be made with frozen or fresh berries, and is the perfect guilt-free dessert topping for almost any occasion!
Harness the natural sweetness of apple juice concentrate in this refined sugar-free berry sauce!
It is total bliss ladled over waffles or pancakes, swirled in homemade vegan yogurt, layered in parfaits, or drizzled over nice cream, vegan rice pudding, or vegan cheesecake!
How to make naturally sweetened berry sauce:
Start by choosing a selection of frozen berries. Add berries to a medium sized saucepan along with the apple juice concentrate (Photo #1). Bring to a simmer over medium heat, stirring occasionally.
At this point, you can leave your berries whole, mash them a bit with a potato masher, or remove from heat and puree with an immersion blender, depending on your texture preference.
In a small bowl mix together cool water and cornstarch or arrowroot powder (Photo #2).
Pour the cornstarch or arrowroot mixture into the pot of simmering berries (Photo #3). Continue to cook over medium heat while stirring continuously until sauce thickens and clears, then remove from heat (Photo #4). Stir in lemon juice and enjoy hot or cold!

What kind of berries should I use?
Fresh or frozen berries work equally well in this recipe. If using fresh berries, just be sure to keep the lid on the saucepan initially to prevent scorching until the berries begin to create their own juice.
A combination of sweet and tart berries adds wonderful depth of flavor to the sauce. Blueberries, raspberries, sweet cherries, sliced strawberries, marion berries, blackberries, huckleberries are all wonderful options!
Can I substitute something else in place of apple juice concentrate?
Depending on the natural sweetness of the berries ½-3/4 cup of agave nectar or granulated sugar can also be used in place of the apple juice concentrate. Be sure to also decrease the amount of cornstarch or arrowroot used by at least one tablespoon as well.
Other fruit juice concentrates are delectable as well! Grape juice concentrate or white grape peach juice concentrates are delicious with a variety of frozen fruit or berries as well!
