This Vegan Fruit Pizza is a beautiful and delicious way to treat yourself and family or friends! A soft-baked sugar cookie crust is topped with a light cream cheese frosting, covered with beautiful fruit of your choice, and drizzled with a lemony glaze!
Fruit pizza is the perfect dessert for almost any occasion! This vegan and healthier take on traditional fruit pizza can be made as fancy or simple as you like! All you need is to make a simple soft sugar cookie crust, cover it with creamy frosting and then just grab your favorite fruit-in-season and create a symmetrical or abstract masterpiece! Don't forget the special lemon drizzle touch if you love sweet and tangy!

Steps to make the 'pizza' cookie crust:
First, cream together coconut oil and brown sugar in a medium sized mixing bowl (Photos 1 & 2).
Now add non-dairy milk, vanilla and almond extracts, salt, and baking powder and mix. Last, add all purpose flour and mix just until all dry spots are incorporated (Photo 3).
Use your fingers to press cookie dough into a pan-sprayed 9 x 11 glass baking dish or roll into a 12 inch circular pizza shape (Photo 4).
(If you have time, you can chill cookie dough for about 10 minutes in the refrigerator to make it less sticky to work with.)
Bake at 350 degrees for 15-18 minutes, then let the crust cool completely before adding toppings!

Soften vegan cream cheese at room temperature for an hour or so (or 15-20 seconds in the microwave!) then combine with maple syrup and vanilla extract (Photo 5). Keep mixing with a fork until completely smooth.
Spread your cream cheese frosting on the cooled cookie crust and top with your favorite sliced seasonal fruit (Photos 6 & 7)!
In a small bowl mix 1 tablespoon fresh squeezed lemon juice and 4 tablespoons of powdered sugar. Drizzle over the fruit for that extra special touch and bright sweet taste (Photo 8).

What fruit is best to top fruit pizza with?
Fresh or canned fruit is best as it doesn't add too much liquid (like most frozen fruit does) to dilute the vegan cream cheese filling. It's fun to theme decorate for the occasion too: a flag for the 4th of July, red and green fruit for Christmas, a rainbow for birthdays etc.! But here's some of my favorite fresh fruits to use!
- strawberries, raspberries, blueberries, blackberries
- grapes
- nectarines or peaches
- mandarin oranges
- kiwis
- mango
- pineapple

Prep your fruit pizza ahead:
While I wouldn't recommend assembling your fruit pizza more than a couple of hours ahead of when you plan to serve it, you can certainly make the cookie crust and cream cheese frosting up to several days ahead and just keep it in the fridge! Just be sure and remove the cream cheese frosting from the refrigerator an hour or so before assembling everything so it can soften up enough to spread!

- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ¼ cup non dairy milk

- 1 ½ cups all purpose flour
Vegan Cream Cheese Filling
- 1 8 oz Vegan Cream Cheese
- 3 tablespoon Maple Syrup, or Agave Nectar
- 1 teaspoon Vanilla Extract
Fruit Topping
- 2 cups fresh fruit or berries, sliced
Lemon Drizzle
- 1 tablespoon fresh lemon juice
- 4 tablespoon powdered sugar

Is the coconut oil melted then measured or is it liquid coconut oil?

HI Anita! It doesn't matter much, you can do either way, the coconut oil will likely soften and melt from all the mixing. If you look at my pictures in the blog post, you'll see that the coconut oil was kind of half-melted and soft.
