Dig into this delish individual treat any time you get a dessert craving! The coffee notes of this mocha mug cake enhance the chocolate flavor and make this such a satisfying dessert.
1.5teaspoonespresso ground coffee(or use instant coffee)
½teaspoonbaking powder
1pinchsalt
¼cupalmond milkor other dairy-free milk
1tablespoonvegetable oil
optional: mini chocolate chips
nonstick baking sprayor extra vegetable oil to brush the mug
optional: powdered sugarfor serving
Instructions
Grease a 12-oz microwave safe mug—either spray it with baking spray or brush with vegetable oil.
Combine all the dry ingredients (flour through salt) in a medium bowl or your large measuring cup. Stir or whisk until evenly distributed.
¼ cup all-purpose flour, 2 tablespoons cocoa powder, 3 tablespoons sugar, 1.5 teaspoon espresso ground coffee, ½ teaspoon baking powder, 1 pinch salt
Add in the almond milk and oil. Whisk until smooth.
¼ cup almond milk, 1 tablespoon vegetable oil
Pour the mixture into the prepared mug. Optional: Top with a few chocolate chips.
Cook in the microwave on full power for 75-90 seconds, or until the top is set and a toothpick inserted into the center comes out clean (or with clean chocolatey crumbs) but not wet. If your microwave is weaker, you can go to 2 minutes, but do not over cook or it will be too dry. Keep an eye on the microwave, stop it if the mug cake starts overflowing and let it come back down before continuing.
Allow to rest and cool down for at least 5 minutes before eating. Dust with powdered sugar to serve, and enjoy!
Notes
→ Use a large mug because the cake rises as it "bakes" in the microwave. You can mix the mixture directly in the mug, but make sure to whisk/mix it really well so no lumps remain at the bottom.→ ALWAYS KEEP AN EYE ON THE MICROWAVE AS THE MUG CAKE IS COOKING! If you see it rising too high but the center, open the microwave door, let it cool down, the let it continue cooking.→ DO NOT OVERCOOK. The mug cake should be fully cooked and not wet on top, but if you overcook it, it will be too dry. So keep an extra close eye on it the first few times you make this. → If you want more chocolate chips on top, pause the microwave halfway through cooking, add more chocolate chips, then continue cooking.→ Serve with powdered sugar, scoop of vegan ice cream, vegan whipped cream, or a drizzle of vegan caramel sauce.
