Enjoy these refreshing, delicious vegan Mango Popsicles! So fun to make and even better to eat! Choose one of the instructions below, depending on whether you want to make layered popsicles, or more basic ones that take only 5 minutes of your time.

Instructions
To make layered popsicles:
In a blender, purée the frozen mango with the mango juice. Set aside.
In a large bowl, mix the coconut milk and maple syrup.
Layer the popsicles: add 2 tablespoons puréed mango to the popsicle molds, then place in the freezer for about 10-20 minutes, or until semi-frozen. Remove from the freezer and add 2 tablespoons of the coconut milk mixture. Place in the freezer for about 20 minutes, then repeat the process.
After the molds are filled up, gently tap the molds to release air bubbles, insert the popsicle sticks, and freeze for at least 5 hours or overnight. To release popsicles from mold, place the molds under hot running water for a few seconds.
To make simple popsicles:
In a blender, purée all the ingredients together. Pour the mixture into the popsicle molds.

If you can't find mango juice, use pineapple juice, or orange-mango juice.
Fresh mango works great too! Or a combination of frozen mango and other fruit.
Milk: feel free to substitute for any plant milk, but canned coconut milk yields the richest, creamiest popsicles!
Other flavor variations to try: Add some fresh mint leaves, a pinch of cardamom powder, or crystallized ginger to the blender when blending your mango!
