Caprese-Style Chickpea Artichoke Salad

Ingredients

  • 15 oz Can of Garbanzos
  • 13.75 oz Can of Artichoke Hearts
  • 6 oz Can of Olives
  • 2 cups Grape Tomatoes Chopped
  • 3 cloves Garlic
  • 2 tsp Balsamic Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Salt
  • 1/4 cup Fresh Basil Chopped
  • Squeeze of fresh lemon optional

Instructions

  • Rinse and drain Garbanzos, drain and roughly chop artichoke hearts.
  • Slice olives. Mince Garlic. Dice tomatoes.
  • Add chopped fresh basil, olive oil, salt and balsamic vinegar.  
  • Mix all together well, let marinate for a few minutes or enjoy immediately.
