It’s a new year. It’s a NEW YEAR!!! Yes, I’m so excited about it! I’ve been mostly absent from my blog the last few weeks for a variety of reasons, but mainly because of a very special occasion – a wedding!! (No, not me! I’ve been married for almost 15 years now! Whew!) But a very special sister-in-law of mine decided to get married here in the northwest just after the new year. That meant a WHOLE lot of family and company coming in from all over the world (literally) to stay near or on the farm which includes the home of yours truly. 😉 It was a totally crazy and amazing time and I’m SO glad the happy couple is happily married! The days leading up to the wedding included huge dumps of snow, combined with drastic warming of temperatures, baking of 35 pies, cooking of tons of lasagna, hosting a bachelorette party…and the groom falling off a 20 foot roof while shoveling snow and fracturing two discs in his spine! And yes, he did stand and walk at his wedding!!!!
Ahh, yes, I’m totally in love with this soup!! It takes literally just a few minutes to throw together and the flavors are just…wonderful (yeah, I’m totally underwhelmed at my adjective use there! Should-a gone with ‘smagdoovious’ 😉 ). At any rate, the truth is that I could literally eat this three meals a day for a loonnnggg time! And despite the fact that variety is the best for our bodies, I’d still be getting decent nutrition because this soup is power-packed with protein and greens! Yummers!!!! Now onto the making of this wondrous soul-satisfying soup!!
Summer and Zucchini. They were both here in such glorified abundance, and now they are both almost gone. What happened to summer? I’ve been outside trying to catch those last few warm rays of sun and get my garden harvest in before a hard frost. I don’t think the eventual lack of squash will make my kids sad tho. 😉 “Squash again mom??” So in these final days of gardening with monster zucchini (read small baseball bat size) and yellow squash invading my fridge, we are getting creative.
I’m going to let you all in on a little secret!! Slow cooking is an art. I mean a really simple art, but still! Letting the food cook slowly with little ‘disturbance’ (read ‘attention’) on my part is a wonderful thing! The flavors resulting from low continuous heat are just superb. This curry is an absolute dream! I have to add here that if you have recently acquired an instant pot (like me!) you can also use the slow cooker setting on that. It’s spring. (Someplace!) Here it is really
spring still rainy, cold, dreary. Wait, am I depressing you? It’s not that bad – only sometimes. 😉 Really, I just needed a bowl of this tasty soup to warm up my insides and make me a real believer that winter is over. 🙂 Thankfully, although my family may not always understand my need for sunshine, they certainly share a love of this soup! This is my ideal week-day lunch. Lentils are so, so, SO good for us. Each little legume is a powerhouse of protein, folate, zinc, and iron! I feel so satisfied and energetic after eating them. Plus, this just tastes good. I mean, who doesn’t like creamy, satisfying, guilt-free food??? Oh, and yeah, this is like almost vegan fast food. Super-duper easy. You’ll love whipping this out in a few minutes and feeling kinda fancy at the same time.
